MUFFIN: Pumpkin Nut and Date Mini-Muffins

Revised from HAWGWILD1 Pumpkin Nut Muffin recipe.

I added dates, other choices could be chocolate chips, dried fruit (Cranberries), or other nuts like pecans.

Number of Servings: 24

Ingredients

    1 cup flour
    1 cup whole wheat flour
    1/2 tsp salt
    1/2 tsp baking soda
    2 1/2 tsp baking powder
    1/4 tsp nutmeg
    1/8 tsp ground cloves
    1 tsp cinnamon
    1/3 cup canola oil
    3 Tbsp. Sucanat
    1 egg
    2 egg whites
    1/3 cup orange juice
    1 cup pumpkin puree
    1/4 cup chopped walnuts
    1/4 cup chopped dates

Directions

Preheat oven to 350 degrees. Spray a mini-muffin pan with cooking spray and set aside.

Mix all dry ingredients in one bowl, except walnuts and dates. Set aside.

Mix all wet ingredients in one bowl. Then combine wet into dry. Fold walnuts and dates into mixture. Spoon into muffin tray.

Bake for 15-20 minutes.

Calculations are for one MINI-muffin.
