Strawberry Cornmeal Muffins


Number of Servings: 12


    Whole Wheat Flour, 1 cup
    Yellow Cornmeal, 1 cup
    Baking Powder, 2 tsp
    Cinnamon, ground, 1 tsp
    Splenda No Calorie Sweetener, 1/4 cup
    Dannon Light and Fit Vanilla Yogurt, 1/2 cup
    Banana, 1 medium or 1/2 cup, mashed
    Milk, 1%, 1/2 cup
    Large Egg (1 egg)
    Strawberries, fresh, 1 cup, chopped


Preheat oven to 400 degrees. In large mixing bowl, combine the first five (dry) ingredients. In a small bowl, combine the yogurt, banana, egg, and milk. Add the moist ingredients to the dry ingredients until combined. Do not over mix. Fold in the strawberries. Divid evenly in 12 muffins in a muffin tin sprayed with cooking spray. Bake for 15 minutes or until done. Serves 12.
