Introduction

This Tabouli recipe is really refreshing and very healthy. This Tabouli recipe is really refreshing and very healthy.
Number of Servings: 7

Ingredients

    - 1 cup bulgar wheat, dry
    - 1 1/2 cup boiling water
    - 1/4 cup lemon juice
    - 1/4 cup olive oil (use less if you prefer)
    -- 2 cloves garlic, minced
    - 4 scallions, minced
    - 1 packed cup of parsley, minced
    - 10 - 15 mint leaves OR 1-2 tbsp dried mint, chopped
    - 2 medium tomatoes, diced
    - 1 cup cucumber, diced

Directions

makes 6 - 8 servings

- Put the bulgar in the bowl, cover with boiling water and let stand until tender (at least 20 minutes)

- Add lemon juice, oil and garlic. Mix well. Cover and refrigerate for at least 1 hour

- 30 minutes before serving, mix in remaining ingredients. Serve cold. Enjoy!

    This is similar to the one I make. I add peppers, at least, and maybe other vegetables. To make it an entree, add black olives and feta cheese. - 6/22/09

  • Calorie count doesn't include the bulgar wheat. So its actually about 180 calories - 10/30/11

  • This is the delicious tabouli recipe from the Moosewood Cookbook. HOWEVER-- the calorie counts are too low! Bulgar wheat isn't entered into the "ingredients" list! This adds an additional 78 calories. Serving size = a scant cup, btw. - 5/5/10
