Golden Chicken Curry

Introduction

Great Recipe to use up all of those veggies in the crisper before going away for the weekend! Great Recipe to use up all of those veggies in the crisper before going away for the weekend!
Number of Servings: 2

Ingredients

    12 oz. of boneless, skinless Chicken Breast
    2 Tsp Siracha Chili Sauce
    1 Tbsp Butter
    1 Small Onion
    1/2 Cup assorted Bell Peppers (I like the color they add), cut into bite sized pieces
    1/2 Cup Zucchini, sliced
    1/2 Cup Summer Squash, sliced
    1/4 Cup Golden Raisins
    1/2 Cup Skim Milk
    1/2 Cup Fat Free Chicken Broth
    2 Tbsp Curry Powder
    1 Tbsp Corn Starch

Directions

Chop chicken into cubes, toss with siracha chili sauce, cook in non-stick skillet. Set aside.
In a larger pan, sautee the onion, peppers in the butter until soft. Add the corn starch, salt and curry powder.
Stir in the milk and the chicken broth, bring to a boil until sauce has thickened.
Add the remaining vegetables, chicken, raisins and cook until heated through.

I serve as is, but I'm sure would be great with brown rice, and/or some naan. mmm
