Energy Bar - Fruit & Nut

Number of Servings: 25

Ingredients

    *1 C Pecans
    *1 C Almonds, whole
    *1 C Dates pitted, chopped
    *1 C Apricots, dried halves
    *2 TBS Spelt Flour
    *2 TBS Flour, white
    *2 TBS Flaxseed, ground
    *1/8 tsp Baking Powder
    *1/8 tsp Baking Soda
    *1/4 tsp Salt
    *1/4 C Dry Oatmeal
    * 1 lg Egg, fresh,
    * 5 TBS Maple Syrup,
    * 1 tsp Vanilla Extract,

Directions

Preheat oven 350 F, lightly oil square baking pan, spread pecans out and bake 7-10 minutes until aromatic, remove from pan and repeat with almonds.

Turn oven down to 325 F.

While roasting nuts combine Spelt and All-purpose Flours, Flaxsee, Salt, Baking Powder and Baking soda in food processor, pulse just to combine. Add Pecans and Almonds; pulse 3-5 times to coarsely chop. Add Oats, Dates and Apricots; pulse 10 - 15 times till mixtures is well chopped but coarse.

In large bowl, whisk together Egg, Maple syrup and Vanilla, add fruit mixture and use hands to mix well, separate any clumps of fruit.

Spread mixture evenly in square pan and bake for 25 - 30 minutes just will set and golden brown. Don't overbake or bars will be too dry.

Let cool on rake for 5 minutes, then cut into 25 squares. Leave bars in pan till cooled.
