Ingredients

    4 Red Ripe Tomatoes
    2 cloves garlic
    2 Tbsp. olive oil
    1 tsp. tomato paste
    1 medium yellow onion
    1/2 green bell pepper
    1/2 red bell pepper
    4 eggs
    salt
    pepper
    sweet paprika

Directions

Sautee onions, garlic, and peppers until onions are golden brown. Add tomatoes and tomato paste and simmer for about 5-10 minutes, covered, stirring occasionally.

Crack the 4 eggs on top of the tomato mixture and allow to cook. Cook slightly longer for harder yolk.
