4 quarts water
2 lbs beets, peeled & cut into straws
1 Large carrot peeled & sliced thin
Many additions can be made to this recipie such as: potatoes, pork & beans, sour cream, mushrooms, hard boiled eggs. Experiment & add what you like but don't forget to add the calories.
Can be served hot or chilled during the summer.
Serve hot or cold.
