Vegetable &Green Lentil Stew with Couscous

Number of Servings: 6

Ingredients

    1 can low sodium chicken or vegetable broth
    14 oz can diced tomatoes (no salt added), undrained
    2 med zucchini, diced
    1 red pepper, diced
    1/2 cup thinly sliced carrots
    1/2 cup dried green or red lentils, rinsed and sorted
    1/2 tsp salt
    1/2v tsp sugar
    1/4 tsp black pepper
    2 Tbsp fresh (or 2 tsp dried) basil or thyme
    3/4 cup whole wheat couscous (uncooked)
    1 c water
    3/4 cup shredded cheddar cheese

Directions

place first 9 ingredients in a 4.5 quart crock pot and stir. Cover and cook 8 hours on low or 4 hrs on high.
When cooked through, add the basil, stir and cook 15 more minutes to blend flavors.
Meanwhile, boil 1 c water & add couscous. Cover and let sit for 5 minutes. Stir with fork.
Serve stew over couscous &sprinkle each serving with 1/2 oz (2Tbsp) cheese.
