Romain Heart Salad with Apples and Almonds

Introduction

Ingredients

    1/2 cup almonds toasted and cooled (toast in 350 oven for 10-20 mins watch carefully)
    1 med head of Romain lettuce - Soaked and washed.
    1 apple cored, sliced thinly

    Dressing
    add and whisk together
    1.5 TBSP cider vinegar
    1 tsp. dijon mustard
    1 tsp. honey or agave nectar
    1 TBSP mayonaise
    1 Tbsp soft goat cheese (optional)
    1-2 Tbsp plain low-no fat yogurt

    place lettuce, apple and almonds in bowl add dressing, toss and let sit for 10-20 mins to allow the flavors to mix (optional)
