Spinach Supreme Casserole

Introduction

Like creamed spinach but with crunchy French Fried Onion Rings Like creamed spinach but with crunchy French Fried Onion Rings
Number of Servings: 6

Ingredients

    2 10 oz pkg/boxes frozen chopped spinach
    1 can 98% fat free Campbell's Cream of Mushroom Soup
    6 oz light Philadelphia Brand Cream Cheese*
    1 small (2.8 oz) can French's French Fried Onion Rings
    Salt and pepper to taste

    (can use fat free Cream Cheese but I use light)*

Directions

Cook spinach as directed on box, about 6 minutes. Preheat oven to 350. While spinach cooks, cut cream cheese into cubes and place in mixing bowl. Drain spinach and place on top of cream cheese. Allow the hot spinach to soften the cream cheese and stir, blending well. Then add 1 can cream of mushroom soup, salt & pepper to taste and 3/4 can of the french fried onions. Stir well. Spray a 2 quart casserole dish with non-stick cooking spray. Pour spinach mixture into casserole dish and bake at 350 for 25 minutes. Remove from oven, sprinkle remaining onion rings on top and return to 350 degree oven for about 5-10 minutes or until onions are brown. Serve as a side dish with roast chicken, beef or pork. Makes about six 3/4 cup servings. Easy to make and very good. Most people who do not like spinach like this...rarely have leftovers.
