Ingredients

    1 c heart smart bisquick
    1/4 cup egg beaters
    2/3 cup light vanilla soy milk
    1 tbsp splenda
    1/2 tsp cinnamon
    1/4 tsp nutmeg
    1/4 tsp vanilla extract
    1 tbsp unsweetened applesauce
    1/2 cup canned pumpkin

Directions

Mix ingredients well, allow to rest 10 minutes. Cook on a hot skillet. Recipe makes 10, 3.5" diameter pancakes. Nutritional information is per pancake.
