1/4 Lb bacon, cooked and crumbled
2 tbspn Olive Oil
1/4 Cup finely chopped onion
1/4 Cup finely chopped celery
1/4 Cup finely chopped carrots
1 15 oz can Diced tomatoes with juice
1 19 oz can Cannelli beans, rinsed
4 Cups chicken broth
2 cups cooked brown rice elbow macaroni
1 tspn black pepper
Cook macaroni according to package directions in a separate pan.
Remove all bacon grease except 1 tspn. Add olive oil and heat over medium heat.
Add onion, celery and carrots. Cover and cook until tender stirring occasionally. About 10 minutes.
Add tomatoes. Break tomatoes up with spoon and cook until reduced by half.
Add broth, beans and pepper, and salt to taste.
Add cooked macaroni and warm through.
Add crumbled bacon, stir and serve.
