Microwaved Egg muffin

Ingredients

    1 Sourdough English Muffin
    1 tbsp water
    1 raw egg
    .1 tbsp margerine

    Spices that can be added:
    Dry onion flakes
    Ground black pepper
    etc.

Directions

Wisk the egg in a small bowl

Add 1 tbsp water to the bottom of a microwave egg cooker with more or less the same size and shape that fits in the English muffin.

Add the wisked egg

Add spices if you'd like

Cook the egg for 40 sec.

Let the egg sit for 1 minute.

Adjust the cooking time if necessary with 2 sec increases so that the egg doesn't get overcooked.

While the egg sits for a minute or two, you can cut the English muffin into halves and toast it to your liking.
I like my muffins just warm.

After the muffin is toasted, spread margerine on it.

Put your cooked egg on one half of the muffin.

This is a good time to be creative and add anything you'd like to have in your muffin besides the egg.

I enjoy adding any cooked or steamed vegetables from the night before, some baby spinach leaves, or very thin tomato slices.

Cover with the other half of the muffin.

Put it on your favorite plate.

Get a cup of your favorite drink.
