Low Carb Bran Chocolate Muffin-Net 0.5




Number of Servings: 16

Ingredients

    1 Egg
    1 tbsp Cinnamon, ground
    1 tsp Vanilla Extract,
    1 tsp Baking Powder,
    1 tsp Baking Soda,
    1 1/2 c Wheat Bran - PC, 24 tbsp
    1/2 c Splenda, 24 tsp
    1/2 c Vital wheat gluten, 115 grams
    1/4 c Oat Flour
    1/2 tsp Salt
    1 1/2 cup Coffee, cooled
    4 tbsp Soy Flour
    4 tbsp Olive Oil
    4 tbsp Cocoa, dry powder, unsweetened

Directions

1) Preheat oven to 400 degrees F/ 200 degrees C
2) Line muffin tin with paper liners
3) In a large bowl mix together all dry ingredients with a fork or wire whisk
4) In a medium bowl- beat together all wet ingredients
5) Pour WET into DRY ingredients and mix until JUST combined
6) Spoon into muffin cups and bake for 20-25 min or until done
7) EAT and ENJOY! :) :) :)

  • Wow! I added a cup of chips and made my yield 12 regular muffins. These are my favorite chocolate SP muffins. (Iíve tried 2 others.) I like the texture and low calories. Best of all, with no milk product in the ingredients, I get maximal benefit from the anti oxidants of cocoa powder. Thanks for - 3/28/10
