Tuscan Tuna Salad Wrap

Introduction

Above and beyond your average tuna salad. Above and beyond your average tuna salad.
Number of Servings: 4

Ingredients

    2 tbsp fat-free Greek yogurt
    1 tbsp chopped fresh basil
    1 tsp fresh lemon juice
    1/4 tsp fresh lemon zest
    1 can (6 oz) tuna, packed in water, drained
    1/2 can white beans (cannellini or great Northern), rinsed and drained
    1/2 cup chopped celery
    2 tbsp chopped red onion
    4 whole grain omega-3-enriched tortillas (8" diameter)
    2 tbsp prepared tapenade (olive spread)
    2 cups baby arugula

Directions

Combine yogurt, basil, lemon juice, and lemon zest in a medium bowl. Stir in tuna, beans, celery, and onion.

Lay wraps on flat surface and spread each with 1/2 tablespoon of the tapenade. Top with arugula and tuna mixture. Roll up and serve.
