Ingredients

    Ingredients:

    * Cabbage, fresh, 6 cup, chopped
    * Roma (plum) Tomatoes, 4
    * Green bell peppers, 2 cup, chopped
    * Onions, raw, 2 cup, chopped
    * Carrots, raw, 3 cup, chopped
    * Garlic, 3 clove (minced)
    * Olive Oil, .25 cup
    * Tomato Paste, 1 can (6 oz)
    * Distilled White Vinegar, 1/4 cup
    * Salt, 1 tbsp
    * Leaf Oregano, 1 tbsp
    * Basil leaf, 1 tbsp

Directions

Chop all vegetable ingredients into small dice (approx. 1/4 inch). Mix together in large bowl.

Mix tomato paste, and remaining ingredients in a small bowl to create the dressing.

Fold dressing into vegetables turning until thoroughly incorporated.

Makes 10 servings of about 1.5 cups.

Finish with 1/4 cup of grated Parmesan cheese and serve over 1 cup of tri-color rotini for a complete meal.
