Ingredients

    Boneless, skinless chicken breast tenderloins, 16 oz
    Progresso Italian Style Bread Crumbs, 1 cup
    Ragu meat sauce (or other marinara sauce), 1 cup
    Mushrooms, fresh, 2 cups (1 container)
    Olive oil, 2 Tbsp
    Mozzarella Cheese, part skim, finely shredded, 1 cup
    Large egg, lightly beaten, 1
    Angel hair pasta, 1/2 package

Directions

Flatten chicken tenderloins to a 1/3" thickness. Place bread crumbs in large plastic Ziploc bag, then dredge chicken through egg and place into plastic bag. Shake well to coat each piece. Next, over Med-high heat, add olive oil and when hot, add mushrooms and cook until soft and browned slightly (about 10 minutes). Remove with a slotted spoon and put aside. Next, add chicken to the pan and brown on each side until cooked (approx. 3-5 minutes each side). While cooking chicken, cook angel hair pasta and marinara sauce in separate pans according to package directions. When chicken and pasta are cooked, arange pasta on plates with chicken and mushrooms on top; cover lightly with marinara sauce and sprinkle with Mozzarella cheese and serve. May add parmesan or romano cheeses to finished meal (not included in nutritional info). Makes about 6 servings of two pieces each.
