Quinoa Salad

Introduction

A different and super filling salad! A little goes a long way! A different and super filling salad! A little goes a long way!
Number of Servings: 8

Ingredients

    1/1/2 c. Casbah Quinoa
    3c. Low Sodium Chicken Broth (or Veg to make a vegetarian salad).
    1 Container of grape tomatoes, halved. Or whole cherry tomatoes.
    1 Sweet yellow pepper chopped
    1/4c chopped parsley, basil or any herb of your liking.
    1/4c Extra Virgin Olive Oil
    3tbsp Apple Cider Vinegar
    1 Garlic clove (or more).
    Salt and pepper is optional.


Directions

Rinse Quinoa well in a fine mesh sieve and drain.
Bring broth to a boil and add Quinoa. Stir and reduce heat to low. Cover and cook about 20min or until liquid is absorbed.
Fluff with a fork into a large bowl and let cool slightly.
Add tomatoes, pepper, cucumber and parsley.
In a small bowl whisk together oil, vinegar and garlic.
Drizzle over salad and toss to combine. Season to taste.
This recipe is from the Casbah Quinoa box. I used less Olive oil and it turned out just as great!
