Apple/Blueberry Frittata
Submitted by: PARALEEIntroduction
Yummy alternative to a standard egg breakfast Yummy alternative to a standard egg breakfastNumber of Servings: 1
Ingredients
-
2 eggs
1/4 cup plain soymilk
1 small apple (any variety, I like ones that are sweet but crisp, like Gala or Pink Lady)
1.3 cup blueberries
dash of cinnamon, nutmeg, and ginger, to taste
Directions
Spray a skillet with cooking spray. Slice apples, sprinkle with cinnamon, and begin cooking over medium heat. Beat eggs and soy milk together with a fork. Turn apples so that they cook evenly. When apples begin to look soft, pour egg mixture over them. Sprinkle ground cinnamon, nutmeg, and ginger over the egg mixture to taste. When egg mixture is set on the bottom and still a bit soft on top scatter blueberries over the top. Cook for a few minutes more until egg mixture is set. Gently slide a spatula under one side of the frittata and fold in half. Fold in half again if necessary to fit it on the plate. Slide out onto plate.
Optional: Garnish with a few more blueberries or a few chopped almonds.Enjoy!
