Crockpot Chili

Introduction

Number of Servings: 4

Ingredients

    1 pound 93% lean ground beef
    1 medium onion, chopped
    1 Tbsp chili powder
    1.5 tsp ground cumin
    32 ounces canned diced tomatoes, undrained
    15 ounces canned pinto beans, drained and rinsed
    0.5 cup salsa

Directions

Brown ground beef and onions in large skillet until browned and onions are tender. Drain fat. Put meat mixture and all other ingredients in slow cooker and stir until well mixed. Cover, turn on low, and walk away. No need to check on it or stir it until it is done cooking. Cook for 5 to 6 hours on low, until chili is bubbly.

Garnish with chopped scallions (1 Tbsp=2 cal), ff sour cream (1 Tbsp=15 cal), and shredded cheese (1 Tbsp=20 cal).

NOTE: The nutritional info here is for 4 generous servings. Can certainly have a smaller portion for less calories.
