Ingredients

    -4 chicken breasts (boneless, skinless)
    -1 3/4 cup coconut milk
    -8 Tbsp curry paste
    -1/4 cup low fat plain yogurt

Directions

Preheat oven to 375.

Pour coconut milk into a mixing bowl. Mix in curry paste and yogurt. Arrange 4 chicken breasts in an oven safe dish. Pour mix over chicken breast.

Bake for 35 minutes.

  • Will definitely make this one again. Great base recipe to start with! We cut the chicken into bite size pieces for easy plating, also cook a little faster. Next time we will let it marinate in the curry sauce for a couple of hours before cooking, Could also add some carrots, potatoes ect... - 3/2/14

  • This looks REALLY yummy, & I'm going to try it soon. But I want to alert you that your nutritional values are all wonky. Way more calories & fat, at least, than the nutritional breakdown accounts for. If you can't adjust it yourself, I'll probably copy it & recalculate. - 4/27/13
