Introduction

Number of Servings: 12

Ingredients

    3/4 cup skim milk
    1/2 cup maple syrup
    2 egg whites
    1 tbsp canola oil
    1/2 cup grated green apple (about 1 med)
    1/2 cup shredded carrot
    1 cup whole wheat flour
    1/2 cup oat bran
    1/4 cup all purpose flour
    3 tbsp sugar
    1 tsp baking powder
    1 tsp baking soda
    1/2 tsp salt
    1/2 tsp ground cinnamon

Directions

Line a 12-cup muffin pan with 12 jumbo paper muffin cups. Preheat oven to 375 degrees F.
In a large bowl, beat the milk, syrup, egg whites and oil until smooth. Stir in apples and carrot. In a small bowl, combine the remaining ingredients. Stir into the milk mixture just until moistened.
Fill muffin cups two-thirds full. Bake until a toothpick inserted in center comes out clean, about 18-20 minutes. Let the muffins cool in pan for 5 minutes, then remove to wire rack.
Muffins will stick to paper at first but afterwards the paper peels off fine.
Makes 12.
