Breakfast Burrito

Introduction

scrambled tofu in a whole grain tortilla served with Salsa. Serves 2 scrambled tofu in a whole grain tortilla served with Salsa. Serves 2

Ingredients

    extra firm tofu, pressed
    yellow onion
    3 lg mushrooms
    basil
    nutritional yeast
    evoo
    garlic
    pepper to taste
    salsa
    whole grain tortilla
    soy mozza to garnish, if desired

Directions

Saute onion, mushrooms, garlic in evoo. add tofu, which has been cut in cubes, and crumble some to give a scrambled egg type texture. Saute about 3 min., med hi heat. Add nutritional yeast, basil, pepper and cook an additional 4 min or so on low heat. The tofu should be browning a little, and the veg will be coolked. put in a tortilla, top with shredded soy cheese if you like (not included in nutritional info). Wrap, top with 2 T salsa and enjoy!

If you like, you can wrap then grill the burrito in a cast iron pan with no oil. i like the crispy texture of the tortilla this way, rather than the chewier texture if its not "grilled"
