Curry Apple and Celery Root Salad

Introduction

Light summery salad using shredded celery root and granny smith apples. Slight spice with a little zing! Light summery salad using shredded celery root and granny smith apples. Slight spice with a little zing!
Number of Servings: 10

Ingredients

    1 large celery root
    2 medium granny smith apples
    4 tsp curry powder
    1/2 cup currants
    1/2 cup mayonnaise
    2 tablespoons lemon juice
    2 tablespoons water

Directions

Blend together mayonnaise, curry powder, water and lemon juice. Reserve. In food processor shred celery root and apple. Mix with mayonnaise and add currants. Can be refrigerated for upto two days.
