California Club Pizza - Pampered Chef

Introduction

Delicious light-tasting pizza that satisfies. Delicious light-tasting pizza that satisfies.
Number of Servings: 8

Ingredients

    1 tsp EVOO
    1 pkg Pillsbury thin crust pizza dough
    2 cubs shredded chicken breast
    8 oz grated 75% reduced fat cheddar cheese
    2 small tomatoes, seeded and diced small
    1/4 medium red onion diced small
    1 medium avocado diced small
    1 tbsp lemon juice

Directions

Preheat oven to 450 degrees. Brush large cookie pan with oil and place dough in pan. Sprinkle boiled/shredded chicken on dough along with cheese. Bake 15 minutes. In a small bowl, combine avocado, tomato, onion and lemon juice. When pizza is out of oven, sprinkle this mixture on the cheese/chicken and bake another 5 minutes. Enjoy!

  • It was good, but it needs some seasoning. I didn't like the lemon juice, next time I will try lime juice and I may add cilantro to the tomato/avacado mixture. I did like the reduced fat cheese and chicken on pizza, and I may play around with other veggies on top. - 4/18/11
