Blueberry Muffins

Introduction

No butter. This is for 7-8 normal size muffins but if you make mini muffins the calorie count would halve at least...only if you can stop at one! No butter. This is for 7-8 normal size muffins but if you make mini muffins the calorie count would halve at least...only if you can stop at one!
Number of Servings: 7

Ingredients

    1 cup flour
    11/2 t baking powder
    1/2 cup sugar
    3/4 cup blueberries
    1/3 cup milk
    1/4 cup olive oil
    1 egg

Directions


Sift dry ingredients together. Stir in sugar and blueberries. Whisk milk, oil and egg together in a jug. Add to dry ingredients stir until only just combined. Do NOT overmix.

Spoon mixture evenly into muffin pans (12 minis or 8 normal). Bake at 200C for 12-15 mins until golden. Stand for 5 mins to make it easier to get muffins out of tins:)

This is a recipe my kids made but I would probably swap half the flour with wholewheat flour and put less oil in (maybe mayo), and non-fat milk. Will try this next time:)
