Introduction

We make these once a month and freeze them, individually wrapped in aluminum foil. They can be reheated straight from the freezer, wrapped in a paper towel, for ~1minute. Ingredients

    6 eggs
    1.5 tsp canola oil
    4 cups fresh spinach
    1 cup shredded cheddar
    8 Don Marcos Fajita Style flour tortillas
    1/2 lb sirloin, cooked and chopped into small pieces
    salt to taste

Directions

1. Scramble eggs in 1 tbsp canola oil.

2. Saute spinach in 0.5 tbsp canola oil.

3. Mix eggs, spinach, steck and cheese together in a big bowl.

4. Distribute egg mixture evenly among 10 flour tortillas. Roll up and either serve or freeze.
