Huevos Rancheros Tostadas

Number of Servings: 4


    1 can of black beans, drained and rinsed
    1 tsp minced garlic
    1/4 tsp cayenne pepper
    1/2 tsp ground cumin
    1/2 tsp ancho chili powder
    4 corn tortillas
    cooking spray
    1 cup Kraft 2 % shredded Mexican cheese
    1/2 cup Chi Chi's Medium Salsa
    4 large eggs
    Sour Cream (optional)
    Chopped fresh Cilantro (optional)
    Chopped onion (optional)
    Avocado (optional)


Preheat oven to 375.

Process the drained and rinsed black beans, garlic, and spices in a food processor or blender.

Spray corn tortillas on both sides and place on a baking sheet. Bake at 375 for 5 minutes, turn over and bake for an additional 5 minutes.

Microwave the bean mixture a few minutes to warm it up a bit.

Fry eggs in a non stick pan to your preference. (I prefer over medium.)

Assemble tostadas:

Spread 1/4 of the bean mixture on the each of the tostadas, top with 1/4 cup of cheese, 2TBS of Salsa, and other toppings of your choice. Top with 1 fried egg.

1 serving = 1 tostada
