Brown Rice & Spinach

Ingredients

1/2 cup diced onion
2 12 oz. packages of fresh spinach (such as Fresh Express)
4 cups total chicken broth (low sodium, fat free) divided
1/2 cup fresh lemon juice
3 cups Minute brown rice
Directions
Spray large sauce pan with PAM
Saute onion until translucent over medium heat in 1/4 cup chicken broth
Add spinach a little at a time until cooked down. Add chicken broth in 1/4 cup increments with the spinach as needed to prevent sticking and/or browning.
Once all spinach is cooked, add 3 cups brown rice and 2 1/2 cups chicken broth.
Bring to boil.
Cover, lower heat, simmer 5 minutes.
Remove from heat, add lemon juice, stir.
Cover 5 minutes.
Serve and enjoy.
Serves approximately 8.
