Number of Servings: 24

Ingredients

    1.5 cups sugar
    3 eggs
    1 cup applesauce
    3 cups flour
    1 tsp Vanilla
    1 tsp baking soda
    1 tsp baking powder
    2 cups grated zuchinni
    1 tsp salt

Directions

Beat eggs, applesauce, zuchinni and vanilla. Add all dry ingredients. Bake at 350 for 1 hour. Makes 2 loaves.

    this recipe was really good. I liked adding the applesauce instead of butter/oil. I made two batches and made cupcakes instead of bread. Made 48 for double batch. The second batch I added Kakao (German for cocoa) for my son. - 4/4/11

    love this recipe! Tastes great with wheat flour, add some reasons and it melts in your mouth. Healthy, but not too bland! - 9/1/10
