Li's Healthy Banana Nut Cookies

Introduction

My husband doesn't like banana bread, so he came up with these yummy cookies to use up some ripe bananas.

Two cookies = about 110 calories. And much tastier than a commercial 100 calorie cookie!

  • These were good and sweet enough to satisfy. I overcooked them a tad, so I think the trick is to keep them plump, do not flatten them. The ones that were "plumper" had a nice chewy center. I will make these again but with a minor adjustment. Thanks for the recipe. - 10/23/12
