1/2 cup unsalted butter at room temperature 1 tsp vanilla 1 lb powdered sugar 2 cup peanuts unsalted finely chopped 1 lb melting chocolate
Cream butter & vanilla in a mixing bowl. Sift the suagar and add 1/3 of the sugar at a time beating well after each addition until the consistency of pie dough. Make easter egg shaped balls 3/4" in size. Melt chocolate. Dip the eggs one at a time then roll in chopped peanuts. Place on wax paper until eggs are set. Store in air tight container.
