Rocky's Vegetarian Chili

Introduction

This is very easy to make on the stove or in the crockpot. I usually double this recipe. This is very easy to make on the stove or in the crockpot. I usually double this recipe.
Number of Servings: 12

Ingredients

    1 12 oz bag of vegetarian burger mix
    1 Tbsp canola or vegetable oil
    1/2 chopped onion
    1 28 oz can diced tomatoes
    1 15 oz can kidney beans
    1 15 oz can black beans
    1 15 oz can vegetarian baked beans
    1 4 oz can diced green chilis
    1 16 oz jar salsa
    3/4 pkg Chili mix (e.g. Old El Paso)

Directions

I recommend putting this in crockpot and letting it simmer for about 4 hours. Cooking time above is in crockpot.

1. Add all ingredients together and cook on low heat until everything is heated through (around 4 hours).

** Notes:
1. Chili Mix: You can use a whole package but 3/4 of a package makes it much more enjoyable. A whole package makes it too hot for people who don't like really spicy foods.
2. Salsa: I love the southwest styles that contain corn, etc... The corn makes the chili "pretty."
3. Vegetarian Burger Mix: I have been using the Morningstar Farms Recipe Crumbles. The last time I made a double batch, I used one bag of the crumbles and one box of the Morningstar Farms Harvest Burger Patties that I chopped. This made for an excellent mix of textures!!
4. Recipe doubles nicely.
