Ingredients

    1 cup dried lentils
    1 medium potato, cut into small pieces
    1 medium carrot, cut into small pieces
    4 Tbsp chopped raw onion
    4 cups vegetable broth
    Salt, pepper, herbs, vinegar or mustard to taste

Directions

Put lentils and vegetable broth into a pot, bring to boil and simmer for about 45 minutes. Add the rest of the ingredients and cook until lentils and vegetables are soft, about 15 more minutes. Season to taste.
