One of my favorite snacks in the Philippines...the easiest way to describe this is a steamed rice cupcake...with a little sliver of cheese on top (be sure to use a soft cheese that will melt well!) Ingredients

4 cups flour (rice is traditional, but any will work)
2 tbsp. baking powder
2 cups white sugar
2 cups water (or 2 cups of water boiled with pandan leaves(optional) - cool the boiled pandan water before mixing)
1-1/2 cup evaporated milk
2 eggs
Pinch of salt
Cheese cut into thin strips
1 tsp. pandan essence/flavor (optional...you could use pandan essence in the absence of water boiled with pandan leaves)
Directions
In a big bowl sift flour, baking powder and sugar. Slowly whisk in water, milk, pandan essence, eggs, & salt, until fully blended.
Apply a little amount of oil enough to cover surface of cupcake moulds. Fill the cupcake moulds with batter to nearly full, then put a slice of cheese on top of each.
Put cupcake moulds in a steamer, and place cheesecloth between each tray to avoid water drips. Be sure to put enough water on the steamer. Steam for 15-20 mins.
