Stuffed Mini Sweet Peppers

Ingredients

4 Mini Sweet Peppers
2 Tablespoons Mozzarella or Italian Cheese Blend
1/2 Cup Uncle Ben's Instant Whole Grain Medley, Spanish Rice Flavor
Directions
Preheat oven to 425 degrees.
Cut the tops off the mini peppers and GUT 'EM!
Place the gutted mini peppers in boiling water for at least 2 minutes.
While those are boiling, nuke the Uncle Ben's and get 1/2 cup ready to stuff the peppers with by mixing in alllmost 2 Tablespoons of the cheese.
Remove the peppers and make sure they are drained of all water, dry outside.
Stuff each pepper with approximately 1/4 of the mixture (or 1/8 cup each).
Bake in the oven for about 8-10 minutes, pulling out 2 minutes before the end of cooking to add the remaining cheese on the outside of the pepper as decoration.
