Potato Soup

Introduction

A lighter version of potato soup. A lighter version of potato soup.
Number of Servings: 12

Ingredients

    3 slices of Bacon
    1 small onion
    6 medium potatoes
    1 tsp salt
    Cold Water
    2 cups almond milk
    2 tbs butter (i used light butter)
    1/8 tsp pepper

Directions

1. Cook bacon in a skillet pan, when cooked remove and place on paper towels.
2. While the bacon is cooking peel and chop the onion into small pieces.
3. Peel and cut each potato into 4 peices.
4. Put potatoes, onion, and salt into saucepan. Put in just enough cold water to cover them.
5. turn the heat to medium high until water begins to boil.
6. Turn down heat, cover, and let simmer for about 20 minutes, until the potatos are cooked through.
7. Leaving the water in the pan, use a potato masher to mash the potatoes and oions .
8. Turn heat onto medium-high and slowly add the milk while you stir.
9. When the soup begins to simmer add the butter and pepper. Crumble the bacon into the soup.
10. Keep stiring until the soup is smooth and hot

yields 12 servings.
