1 1/2 cups all-purpose flour
1 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
1/2 cup (1 stick) unsalted butter, melted to lukewarm
1 1/2 cups mashed bananas (3-4 ripe bananas)
2 large eggs
1/2 tsp. pure vanilla extract
2. Mix wet ingredients together (do not overmix). Stir to incorporate into dry mixture. Divide evenly between 12-16 muffin cups.
3. Bake 20-25 minutes. Remove from pan and cool completely on wire rack. Spread Honey-Cinnamon Frosting thinly over top of cupcakes. Enjoy!
