Stuffed Pork Roast

Ingredients

    One 2 lb. Pork Roast
    One Cup cooked Wild Rice
    1/2 Cup Mushrooms
    1/2 Cup mixed peppers (recommend red & orange)
    1/4 Cup Onion
    4-5 Cloves Garlic
    1/4 Cup Grated Carrots
    BBQ Sauce (Optional)

Directions

Preheat Oven to 350.
Cook Rice as Directed (recommend using half water, half broth).
While rice is cooking, chop and sauté veggies in olive oil or butter and 1/4 cup of broth.
Add 1 cup rice to sautéed veggies.
Slit open roast lengthwise on one side (not all the way through).
Stuff roast with sautéed mixture and tie closed.
Place roast in roaster with 1 in. water and season with seasonings of your taste (I use Johnny's).
Bake at 350 for 2 - 2 1/2 hours.
Optional: Once done in the oven, place in Barbecue on top rack on LOW baste with BBQ Sauce.
