5 Cups peeled and chopped sweet potatoes 2 T light butter 1/2 C sugar free maple syrup
Put 4 C water in a 4 1/2 quart saucepan and place over high heat on the stove. Peel the sweet potatoes and cut into 1 inch pieces. Add the sweet potatoes to the boiling water. Return to a boil and boil for 2 to 3 minutes. Turn off the potatoes and let sit on the got burner for 17 minutes. Drain the sweet potatoes and return to pot. Add butter and syrup. Mash and add salt to taste.
