1-10 oz package imitation crab, coarsely chopped
2 cups chopped celery
1/2 cup chopped scallions (including tops)
1/2 cup chopped cilantro, without thick parts of stems
6 tbsp reducd fat mayonnaise
Makes 8 side dish servings, or 5 main dish servings (try stirring in 3 cups cold macaroni for a pasta salad).
