Introduction

Number of Servings: 17

Ingredients

    1 c. all-purpose flour
    1 c. whole wheat flour
    1 tsp baking powder
    3/4 tsp baking soda
    1 tsp cinnamon
    1 tsp powdered ginger
    1/2 tsp salt
    3/4 c. canola oil
    3/8 c. sugar
    2 eggs
    1 1/4 c carrot, grated
    8 oz crushed pineapple, drained
    2/3 c. raisins
    3 tbsp ground flax seeds

Directions

Makes 17 regular size cupcakes

Sift together the flours, baking powder, baking soda, cinnamon, ginger, and salt and mix well. Beat the oil, sugar and eggs together until well blended. Add the grated carrot, pinapple and raisins. Gradually add the flour mixture, beating just enough to combine ingredients. Spoon batter into muffin cups and bake in preheated 350 degree oven for about 25 minutes or until well risen and golden. Cool on wire rack.
