Ingredients

    Broccoli, fresh - 1 head
    Cauliflower, raw - 1 head
    Portabella Mushrooms - 1 cup
    Campbell's - Healthy Request, Cream of Mushroom
    Campbell's Healthy Request Cream of Celery
    2% Milk Singles Sandwich Cheese, 2 slices
    2% Shredded cheese, 1 cup
    French Fried Onions, 1/2 cup
    Milk, nonfat, 0.5 cup
    * Thyme, ground, .5 tsp
    * Garlic powder, 2 tsp
    * Parsley, dried, 1 tbsp
    * S & P - if desired

Directions

Preheat oven to 375 degrees. Makes 6 hearty servings.

Cut veggies into bite-sized pieces. Steam (or boil) broccoli and cauliflower until done. During that time, mix soup, milk, spices, and mushrooms in medium saucepan. Bring to boil and reduce to simmer... add shredded cheese until melted & remove from heat. Spray 13x9 pan with Pam - place (drained) broccoli and cauliflower in pan . Pour sauce over. Add cheese slices to the top. Bake in 375 degree oven for about 20 minutes, then add french fried onions to cover lightly. Bake an additional 10 minutes. Let stand to thicken and cool - will be HOT! I enjoyed this with tonight with turkey meatballs and whole grain couscous (even my toddler liked it!)... but the side options for a complete meal are endless.
