Vegetarian Black Bean Sauce

Introduction

I wanted a sauce to serve over rice or pasta that contained no meat. I wanted a sauce to serve over rice or pasta that contained no meat.
Number of Servings: 8

Ingredients

    2 cups tomato juice
    1 cup tomato sauce
    1/2 cup chopped green peppers
    1/2 cup chopped onions
    1 cup cubed eggplant
    1/2 cup cubed portabella mushrooms
    1 1/2 cups black beans, rinsed (15 ounce can)

Directions

Combine tomato juice and sauce and add vegetables. Simmer until all vegetables are al dente. Add black beans and simmer to let flavors blend.
Serve over cooked brown rice or pasta.
Each serving equal 1/2 cup.
