Chicken and Vegie Quesadilla

Ingredients

8 Flour tortillas
4 tbsp Low fat cream cheese,
1 cup chopped Cabbage
1/2 cup green onion
1/2 cup Onions, raw
2 cup shredded Cheddar Cheese
3 tbsp chopped Cilantro
4 tbsp sour cream
2 Romain Hearts chopped
1 skinless boneless Chicken Breast
Jalopeno Rings (optional)
Directions
1. Grill or cook chicken breast. Chop into small peices.
2. Spread 4 tortillas with 1 tbsp cream cheese each. Top with about 1/8 cup of cheese (reserve some for top of filling)
3. Put cabbage, onions, cilantro, jalapeno (if using) and chicken evently into each tortilla.
4. Top each quesadilla with other tortilla
5. Place on parchment lined baking sheet sprayed with non stick spray. Bake at 350 for about ten minutes, until cheese is melted and slightly browned.
6. Top each quessadilla with chopped romain hearts and 1 tbsp of sour cream.
