Introduction

Made in muffin pans, these are easy, tasty and can be saved for those busy early morning! Took a few different full size and mini recipes and came up with this one! Number of Servings: 6

Ingredients

    2 slices Turkey Bacon
    .5 cup Lite Shredded Cheese
    1 cup Reddi Egg (Egg Substitute)
    .25 cup onions, chopped
    .25 mushrooms, chopped
    .25 red bell pepper, chopped
    .25 tsp salt
    .25 tsp pepper

Directions

Preheat oven to 350 degrees, spray a 6-muffin pan with cooking spray

1. Cook turkey bacon for 2 mins, add veggies and cook until soft, about 3 mins
2. In a bowl mix egg, salt, pepper and cheese (all except 1/8 cup)
3. Place bacon, veggie mix in the bottom of each muffin tin
4. Pour egg mixture equally, about 2/3 full
5. Bake at 350 degrees for 20 mins
6. Sprinkle remaining cheese, and bake 5 more mins.

Refrigerate leftovers, to reheat, place in microwave for about 30 seconds.
