Mexican Oat Soup

Introduction

Number of Servings: 6

Ingredients

    1 cup dry, plain oatmeal
    1 medium onion, diced
    3 garlic cloves, diced
    1/2 cup chopped green bell pepper
    1 hot chilli pepper, chopped
    2 medium tomatoes, chopped
    2 tbsp fresh cilantro, chopped
    1 tbsp oil
    6 cups of veggie broth (or 6 cups water, 1.5 veggie stock cubes)
    1 cup chopped spinach or romaine lettuce
    lemon, fresh cilantro to garnish
    hot sauce can also be added

Directions

makes 6 1-cup servings

-fry onion, peppers, garlic, and cilantro in oil for 3 minutes in large soup pan
-add vegetable stock and bring to boil
-turn heat on low, and tomato and oatmeal and simmer for 6-10 minutes
-add spinach or lettuce and serve hot
-squeeze half a lemon into bowl and add cilantro and hot sauce if wanted
