homemade chicken stock 8 cups escarole 3 cups cannelini beans 1 cup orzo pasta .25 cup onion 1 medium carrots 4oz celery 2 stalks
Clean and dice the onion, carrots, celery and put into a stock pot. On medium, saute the veggies with out oil. Take about 15 minutes. Add the stock and let it come to a simmer, about 30 minutes. Add the chopped escarole. Let cook until it wilts. Add the cooked orzo and beans. Let simmer for another 20 minutes. Enjoy.
