Chicken Enchaladas

Introduction

This is a recipe a friend of mine likes to make. He says the recipe is from his mom's kitchen... something he grew up eating as a kid. This is a recipe a friend of mine likes to make. He says the recipe is from his mom's kitchen... something he grew up eating as a kid.
Number of Servings: 8

Ingredients

    1 can (28 oz) Enchalada Sauce
    1 can (10 3/4 oz) Cream of Chicken soup
    1 can (7 oz) green chilies
    3 chicken breasts, boneless and skinless
    8 flour tortillas
    7 1/2 oz mozzarella cheese
    5 oz cheddar cheese
    1 Tbsp butter
    salt and pepper to taste

Directions

Cut chicken into strips. Bake at 350 in butter, salt, and pepper until its cooked through.

Warm tortillas. Put the chicken in the tortillas, fill with green chili and mozzarella cheese. Roll up tortillas.

Mix the enchilada and cream of chicken soup. Put mixed sauce on bottom of pan. Place tortillas in pan and cover with mixed sauce. Top with cheddar cheese.

Bake everything at 350 for about 20 minutes.
