Mama's Mexican Tator Tot Casserole

Introduction

This is one of those recipes that is going to make your man stand up and beg for more - and he won't even know it's low in calories!! This is one of those recipes that is going to make your man stand up and beg for more - and he won't even know it's low in calories!!
Number of Servings: 12

Ingredients

    2 pounds lean ground beef (browned)
    1/4 cup taco seasoning
    3/4 cup water
    8 oz. reduced fat sour cream
    1 can rotel tomatoes and green chilies
    2/3 cup weight watchers mexican blend cheese
    1 32 oz. bag tator tots

Directions

Using the tator tots as a guide preheat oven and prepare to cook for that amount of time (plus a few minutes).

Brown ground beef, drain and rinse. Add taco seasoning and water. Stir well - no real need to simmer this.

Add sour cream and stir well and scoop into 9x13 pan.

Top with Rotel by spooning it out onto the ground beef and spreading. I have three little guys that are pretty sensitive to spicy, so we omitted this from their section of the casserole.

Sprinkle the cheese evenly over the beef/rotel mixture.

Top with tator tots.

Bake according to the tator to directions.

Section off 12 portions.
